Weight Watchers: Nut and Fruit Breakfast Bites


Nut and Fruit Breakfast Bites
POINTS: 3
INSTRUCTIONS
1/3 cup(s) reduced-calorie margarine, soft
1/3 cup(s) sugar
1/4 cup(s) honey
1/2 tsp ground cinnamon
1 1/4 cup(s) dried mixed fruit, such as raisins, apples and cranberries
1 cup(s) uncooked quick oats
3/4 cup(s) uncooked old fashioned oats, coarsely crushed
1/4 cup(s) chopped walnuts

*I bought a natural fruit combo of strawberries, cranberry's, raisins, and Bing Cherry's and a heart healthy mix or peanuts, almonds, pistachios, pecans, walnuts and hazelnuts. Sounds good, huh? I also used all old fashioned oats. I didn't have quick oats. It worked fine.


Combine margarine, sugar and honey in a saucepan. Cook over medium heat, stirring constantly, until mixture comes to a boil; boil for 1 minute. Remove from heat; stir in remaining ingredients.Press mixture into the bottom of a 9-inch square baking pan coated with cooking spray. Allow to cool and then cut into 16 pieces. Store in a covered container in the refrigerator.



This was decent but it had a strong, artificial butter taste. It also didn't hold together in bar form very well, hence the yogurt concoction above. It was good like this. I prefer the oat and apricot bars but it was worth a try. Maybe with a little tweaking...
